Our recipe is for water ice, a treat that’s local to Philadelphia and some parts of New Jersey. Water ice is sort of like slush, sorbet, or Italian ice, but it has its own unique, soft texture and a refreshing quality that can’t be beat. And when you add the flavor of cotton candy to it….it’s perfect!

Cotton Candy Water Ice

Ingredients:

2 cups cotton candy syrup (or the flavored syrup of your choice)
1 cup water
Juice of 1/2 lemon (about 1.5 tablespoons)

Mix together syrup and water and chill for at least 1 hour. Add lemon juice and process in ice cream maker for 25 minutes or until set. Spoon into covered container and freeze for another 2-6 hours to firm up. Serve cold.
