These vegan peanut butter crunch bars get their crunchy texture from corn flakes and their sweetness from maple syrup. Add in the peanut butter of your choice, and it’s all a wonderful dessert or treat that you can serve to just about anyone.
Vegan Peanut Butter Crunch Bars
4 cups corn flakes cereal
1 cup peanut butter (or almond butter or any nut or seed butter)
1 cup maple syrup
Combine the peanut butter and maple syrup in a bowl and microwave until liquid. Stir together and then add the cornflakes, coating entirely. Press into a parchment-lined baking dish and chill for 30 minutes or until set. Cut into squares to serve. Store chilled.
