Pyxxi is here today, and she’s requested a breakfast staple. French toast! French toast is a great dish because it’s so delicious and so easy to make, but what if you’re vegan? Since French toast usually includes eggs, how can you make it? Aquafaba to the rescue! Aquafaba is the water that beans or chickpeas are canned or packaged in, and it makes a perfect egg substitute in many recipes. And for this, it makes the French toast light, a bit crispy on the outside and creamy on the inside.
Vegan French Toast
Ingredients
6 slices bread (make sure the bread contains no animal products)
1 cup aquafaba
1/2 cup vanilla soy milk (or other non-dairy milk)
Combine wet ingredients and whisk until frothy and thickened. Dip bread in and shake off excess liquid. Place slices into a heated non-stick skillet (spray with cooking spray if you worry about sticking) and cook until brown and crisp on the outside on each side.
